After a lot of trial and error (and a few<br>ruined dinners), sous vide completely changed how I cook at home.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This site is where I share what I&#8217;ve learned \u2014 reviews of the machines and<br>accessories I&#8217;ve actually tested, practical time and temperature guides, and honest<br>answers to the safety questions I had myself before diving in.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I&#8217;m not a professional chef.
