Choose your sous vide chuck roast result
Chuck contains multiple muscles, connective seams, and fat pockets, so “tender” can mean two different things. The lower-temperature path preserves a pink, sliceable interior while a long hold softens the cut. The higher-temperature path produces a well-done, yielding texture closer to braised pot roast.

Choose the 135°F path when pink slices are the priority. Choose 175°F when you want the roast to yield like pot roast. If you want vegetables and gravy to cook together with the beef, a slow cooker may fit the meal better because sous vide keeps the meat and sauce components separate.
Pass the compatibility gate before cooking
Use either schedule only when every condition below is true:
- The beef is fully thawed and starts at about 41°F (5°C).
- It is boneless, intact, and unstuffed.
- The package does not identify it as injected or mechanically tenderized.
- The shortest heating dimension through the thickest meat section is 70 mm or less.
- Each portion is bagged separately, or arranged side by side without overlap.
- Water can circulate around every bag for the full cook.
- You plan to serve after cooking; this guide does not cover cook-chill, storage, or reheating.
If the roast is frozen, bone-in, stuffed, rolled, tied, injected, mechanically tenderized, or thicker than 70 mm after portioning, stop. The schedules here do not provide a validated time adjustment for those conditions.
Measure thickness, not pounds
Weight does not tell you how far heat must travel to reach the center. A broad, flat four-pound roast can have a shorter heating path than a compact three-pound roast. Sous vide heating guidance therefore depends on thickness and geometry rather than weight alone.
Thickness workflow
- Set the thawed roast on a board in its natural shape; do not compress it to force a smaller reading.
- Find the thickest solid section of meat.
- Measure the shortest straight path from one surface to the opposite surface through that section. Do not use the roast’s length or widest face.
- If the reading is 70 mm or less, the portion fits this guide.
- If it exceeds 70 mm, separate the roast along a natural muscle seam or cut it into portions that each measure 70 mm or less.
- Bag the portions separately. If one large bag is necessary, keep pieces in a single nonoverlapping layer with water gaps around them.
This cap is intentionally conservative. Douglas Baldwin’s meat pasteurization table lists 6 hours 3 minutes at 57°C (134.6°F) for a 70 mm slab starting at 5°C. That table cell supports the defined geometry and starting condition; it is not a new chuck-roast cooking recommendation. Chuck still needs the longer 24–36-hour window for the intended steak-like texture.
Steak-like path: 135°F for 24–36 hours
Set the bath to 135°F (57.2°C) and cook compatible portions for 24–36 hours. Anova’s chuck-specific recipe uses this range, while Baldwin’s shoulder-muscle guidance supports a steak-like result after a long hold in the 55–60°C range. Choose 24 or 36 hours by tradeoff
- Start near 24 hours when you want a firmer slice and are willing to work around connective seams.
- Move toward 36 hours when tenderness matters more than a firm steak-like bite.
The extra time is not a guarantee. Chuck roasts differ in muscle composition, marbling, and seam structure, so two compatible portions can finish differently. Long low-temperature cooking can soften connective tissue without making every fat pocket disappear or turning chuck into a naturally tender rib roast.
Steak-like workflow
- Confirm the compatibility gate and measure every portion.
- Season without adding ingredients that interfere with a flat, secure seal.
- Seal each portion in a heat-appropriate bag. If you do not own a vacuum sealer, use a suitable water-displacement sealing method.
- Cook at 135°F (57.2°C) for 24–36 hours with uninterrupted circulation.
- Remove the beef and reserve the bag liquid if you plan to make a separate sauce.
- Dry every surface thoroughly, then sear briefly over high heat.
- Identify grain direction, separate muscle groups where it changes, and slice across each grain.
Braise-like path: 175°F for 10–12 hours
Set the bath to 175°F (80°C) and cook compatible portions for 10–12 hours. Baldwin identifies beef chuck among tough cuts that become fork-tender in this range. This path produces a hot, well-done roast with a yielding braised texture. It is not “medium-rare pot roast,” and lowering the temperature while keeping the shorter time will not create the same format.
- Confirm the same thawed, boneless, intact, 70 mm-or-less compatibility gate.
- Seal portions without overlap and maintain open circulation.
- Cook continuously at 175°F (80°C) for 10–12 hours.
- Transfer the meat carefully; tender sections may separate under their own weight.
- Serve in chunks or thick slices. Brown briefly only if a crust improves the planned dish.
- If making gravy or jus, strain the bag liquid into a saucepan and prepare the sauce separately.
A sous vide bag does not reproduce a braising pot’s integrated vegetables, evaporation, or reduced sauce. Build those elements separately, then combine them at serving.
Finish for crust, clean slices, or sauce
For a fast, even sear
Surface moisture turns searing energy into steam. Blot the roast thoroughly, let surface steam dissipate, and use a very hot pan or grill for a short finish. A brief surface chill can give the crust more time to form before the outer meat heats further. The sear adds browning; it does not replace the bath process.
For slices that eat more tenderly
Look at the exposed face before cutting. If fibers change direction across a seam, pull or cut the muscle groups apart first. Rotate each section, then slice perpendicular to its own fibers. Thin slices help when the 135°F roast retains a firm seam; thick slices better suit the yielding 175°F result.
For bag juices
For a smoother sauce, strain the bag liquid into a saucepan, warm it, and skim any coagulated proteins. Taste before reducing or seasoning because concentration can make an already salty liquid stronger. Treat this as sauce preparation, not as a separate safety validation step.

The USDA conventional endpoint for beef roasts is 145°F (62.8°C), followed by at least a 3-minute rest. That endpoint is separate from a lower-temperature/time process such as the defined 135°F path.
